Food & Health@ORU: Developing sustainable school meals using a Youth Participatory Action Research (YPAR) approach

Welcome to this Food and Health@ORU seminar, where researchers at Örebro University and the University of Gothenburg will talk about a project that aims to develop tasty, nutritious, sustainable, and local school menus, for youth, with youth.
School-aged children have a major impact on the Swedish food system. Now, with over 260 million meals served every year at a price of 7 billion SEK and later, when they are themselves making buying decisions. The goal of this ongoing project is to develop tasty, nutritious, sustainable, and local school menus, for youth, with youth. This is a collaboration between researchers specialized in nutrition, sensory, gastronomy, and circular economy, with Ahlströms Factory, Warbro Kvarn, Nordisk Råvara, and Frejaskolan.

- Monica Hunsberger, Associate Professor at University of Gothenburg, registered dietitian and public health nutritional epidemiologist.
- Henrik Scander – Senior Lecturer at Örebro University, expert in the field of food and drink combinations.
