Ola Albrektsson: “It’s just a matter of time before insects are part of our daily diet”
As a child he ate red wood ants because they tasted so good. With a degree from the Culinary Arts and Ecology Programme, Ola Albrektsson promotes ants as “the caviar of the forest”. He also eats other insects with great enthusiasm, and thinks we should do the same. He has composed a number of recipes with insects and gives tips on the two insects he thinks are the most tasty.
